An excellent opportunity is now available for a Head Chef, with a privately owned and run single unit restaurant, established for over 20 years.
Ninety covers trading over two floors, open style kitchen on the ground floor.
Serving mainly traditional French bistro style dishes with a slightly modern twist. Using fresh local ingredients where possible. Menus change 4/5 times a year, with specials frequently offered.
Menus offered are prix fixe, 2 or 3 courses at both lunch and dinner
Busy and fast serving in excess of 1000 customers per week
Open 7 evenings a week, 3 lunches (Friday -Sunday)
Six chefs lead by the Head Chef
Typical working patterns are 6 or 7 shifts across 5 days.
An experienced team currently in place with many having a number of years with the restaurant with good levels of experience and knowledge
* Menu ideas and design
* Supplier relations and price negotiations
* Recipe development
* Delivery supervision
* Food preparation and service
* Staff management / recruitment / rota design
* Health safety and hygiene management
